How Do You Feel About Sides?
I am not a natural in the kitchen and I did not have any interest in cooking until a couple years into marriage. The same goes for meal planning. Actually that may have come even later. At first my meal plans were very basic. It was some sort of meat with either mac and cheese or tater tots. Not ideal, but it was a start. Eventually I added vegetables in there too. About 6 years in, we were very tired of tater tots and mac and cheese. I asked my husband how he felt about sides. He shrugged. So I began brainstorming some other ideas for sides.
We both enjoy garlic bread, so decided to give these sourdough discard garlic knots a try. I used my sourdough discard sandwich bread recipe and added some garlic. They turned out pretty bland the first couple times. So after a lot of garlic and butter later, we have a yummy side to go with spaghetti.

Why Sourdough?
Grains contain phytic acid, but our bodies don’t really process it well. Phytic acid prevents our bodies from absorbing the nutrients from our food. Fermentation gets rid of most, if not all of the phytic acid, in the grains before we eat them. The fermentation process also helps break down some gluten, so although the bread isn’t gluten free it does have a lower gluten content. This allows people like me, who are sensitive to gluten, to eat sourdough. It also acts like a probiotic, which makes it great for gut health. Sourdough has prebiotic characteristics as well, which simply means that the good bacteria in your gut enjoy eating the fiber.

Sourdough Discard Garlic Knots
Ingredients
1 tablespoon active dry yeast
1 cup warm water
1 tablespoon honey
4 cups flour
1 cup sourdough discard
1 tablespoon garlic powder
1 ½ teaspoon salt
4 tablespoons softened butter
Garlic Butter: 4 tablespoons melted butter & 1 teaspoon garlic powder
Instructions
- First mix together 1 tablespoon active dry yeast, 1 cup warm water, and 1 tablespoon of honey. Allow it to sit for 5 minutes until it is frothy.
- Next add in 4 cups flour, 1 cup sourdough discard, 1 tablespoon garlic powder, 1 ½ teaspoon salt and 4 tablespoons softened butter. Use the stand mixer to knead for 10 minutes.
- Then cover the bowl and allow the dough to rise until doubled. It will take 1-2 hours depending on how warm your house is. Disposable shower caps make great bowl covers.
- Once the dough has doubled in size, divided into 18 equal pieces. Roll the dough on the counter to make a long piece. Tie it like you are making a knot in your shoe laces.
- Put them on a parchment lined baking sheet and cover it. Cover it with a wet tea towel or plastic wrap. Allow it to rise for 30 minutes or until doubled.
- Preheat your oven to 375 degrees while the dough rises. Bake for 15-20 minutes.
- While those bake, melt 4 tablespoons of butter and mix in 1 teaspoon of garlic powder. When the sourdough discard garlic knots come out of the oven, brush them with your garlic butter.

Freezing Sourdough Discard Garlic Knots
If you plan to freeze your garlic knots, then stop at step 5. After you have tied the dough into knots, place them on a parchment lined baking sheet and pop them in the freezer to flash freeze. Once they are frozen you can transfer them to a plastic bag.
When you are ready to bake the sourdough discard garlic knots, set them out on the counter until they double in size. This can take 2-4 hours depending on how warm your kitchen is. If I’m in a hurry, I’ll put them in the oven on low to rise. Then bake as directed and brush with garlic butter.
