Easy Homemade Water Kefir Soda Recipe
Ingredients
Filtered water
Organic brown sugar
Molasses
Half Gallon Mason Jar
Instructions
- First, mix together a tablespoon of molasses, ½ cup organic brown sugar, and 3 cups of filtered water in your mason jar.
- Second, add in at least ½ cup water kefir grains and top off the jar with water.
- Then cover the top of the jar with a paper towel or flour sack towel and allow it to sit out on the counter and ferment. How long this takes will depend on how many grains you have in the jar.
- When it is fermented, go ahead and strain off the grains. The water will be tangy and you can sometimes see little bubbles on the top as well. Mine usually takes 24-48 hours. Sometimes I forget and it sits for several days. You really can’t mess this part up.
- Next put the flavorings in the flip top bottle and fill it up with the strained water kefir. Do NOT fill the bottle up to the top!
- Now you can leave the bottles of flavored water kefir out on the counter. This is called the second ferment, which is what makes it fizzy like soda.
- Make sure to burp the bottles at least twice a day. I highly suggest doing this over the sink and opening it slowly.
- When it is bubbly enough for you (24 hours give or take) drink up!

Easy Homemade Water Kefir Soda Flavors
Sparkling Juice
Add ¼ cup of juice to the flip top bottle before adding in the kefir water. Any sort of fruit juice will work. My favorite is apple juice. You don’t need to add any extra sugar because there is already some in the juice.
Ginger Ale
Grate about an inch of ginger root to add to your bottle. Put in the grated ginger and a teaspoon of brown sugar into the bottle before adding kefir water. You can add more ginger for a stronger taste. The bottle needs some sugar for the kefir to eat so that it ferments a second time.
Lemon Lime
Put a tablespoon of lemon juice and a teaspoon of lime juice in the bottle. Also add in a teaspoon of brown sugar. The bottle needs some sugar for the kefir to eat so that it ferments a second time.
Cherry Limeade
Put a tablespoon of lemon juice, teaspoon of lime juice, and 2 tablespoons of cherry juice in the bottle. Also add in ½ teaspoon of brown sugar. The bottle needs some sugar for the kefir to eat so that it ferments a second time.
Sparkling Lemonade
Put 2 tablespoons of lemon juice in the bottle. Also add in a teaspoon of brown sugar. The bottle needs some sugar for the kefir to eat so that it ferments a second time.
