Taco Tuesday!
When we first got married my recipe repertoire was very limited. Tacos were one of the things I could make. Given this was because there were directions on the taco seasoning packet. That meant that every Tuesday was taco Tuesday at our house. And leftover night was usually tacos too. Thank goodness my husband didn’t mind the abundance of tacos.
My first summer garden brought an overabundance of tomatoes. Problem is, I don’t like tomatoes. At the time I didn’t know how to make pizza sauce or tomato sauce, but chips and salsa was a special treat on taco Tuesday. A bit of experimenting and we had blender garden salsa and boy was it good!
Although my cooking has improved and we have a lot more choices in the recipe box, taco Tuesday still happens on occasion. During the summer months we enjoy some blender garden salsa with our meal or just with some chips as a midday snack. It makes a wonderful addition to the freezer breakfast burritos too!

Blender Garden Salsa Recipe
Ingredients
6 medium-large tomatoes
1 small onion
1 tablespoon lime juice
⅓ cup fresh cilantro
1 teaspoon salt
2 cloves garlic
1 jalepeño without a stem (optional for spice)
Instructions
- First toss all of the ingredients into the blender and pulse until the salsa is as chucky or not as you like.
- Then taste the salsa and add a bit more salt if needed.

Blender Garden Salsa Tips
Start with a small amount of jalapeño. You can always make it spicier, but can’t take away the spice. Make sure to remove the seeds and stem. If you really like spice, leave the seeds.
If you prefer a chunky salsa, use short pulses. This will prevent you from liquifying it the first go around. If you like restaurant style you will pulse a bit more.’
If you don’t have any fresh tomatoes, store bought will work as well. When tomatoes aren’t in season you can use whole canned tomatoes. You would use a quart of home canned tomatoes or a 28oz can from the store.
The salsa is best if left in the fridge for a couple of hours before eating it. This allows the flavors to meld together.
It will stay good in the fridge for about a week if kept in an airtight container. This is not a canning safe recipe.
