Does anybody else have spring fever? I’m ready to get outside to plant the garden. But instead, I’m inside watching it sleet and snow. That doesn’t mean I can’t be thinking about what I’m growing this spring. Check out what I’m growing this spring for some inspiration and spring fever of your own.

What I’m Growing This Spring
This is our first year on our new property and I want to do all of the homestead things. My husband had reeled me back in and told me to pick one thing. So we decided on a garden since I already have experience with that. Last weekend, we built a large raised bed that is the start of an ever growing garden space. Then my husband set up my indoor greenhouse, so that I can start seeds whenever I’m ready.
I’ve decided to put annual vegetables in the raised bed. The perennial herbs will go in the landscaping. The herbs that act like weeds will be put in pots because they have no self control. I’m using Clyde’s Garden planner to help me know when to direct sow outside and when to seed start inside. At only seven dollars it is money well spent. I will continue to use the square foot plant spacing to help maximize my production.

What Herbs I’m Growing This Spring
Some of the herbs successfully survived moving across the state. Others, well it has yet to be determined. This year I am growing herbs for both the kitchen and my medicine cabinet. Most of these herbs will be going into pots, but some will become part of the landscaping as well.
I’m planting sweet basil, cilantro, and parsley for the kitchen. I will start them from seeds indoors before transferring them outside. These plants don’t come back each year, so they will be planted in pots. I don’t like having to replant my landscaping each year, so I will fill it with perennials. I have some thyme and oregano already that I’m hoping will come back in the spring. They spread like weeds, so they must remain in pots. Garlic is one that will be used both in the kitchen and medicinally. It will go in the garden with the vegetables though.
As for the medicinal herbs they tend to be more perennial, so a lot of them are going into the landscaping. I have sage and yarrow plants that I brought with me in pots. I will be transplanting them when I’m ready to landscape. The yarrow had a very hard time, so I’m hoping to give it some TLC this spring before moving it. I’m also adding echinacea or purple cone flower to my herbs. The pretty flowers will look beautiful and the roots are great for the flu. I’m going to try mullein again this year. It did not live long last time I tried it, but I bought it late in the season.
That’s it for herbs. I still have tons of dried herbs left in the pantry from my garden two years ago, so I don’t need a lot this year.
What Vegetables I’m Growing This Spring
One of my first vegetables to produce in the spring is peas. I’ve found that it takes a lot of plants to get very many peas. I have one packet, but may be going back for more. Another one that will be going in soon are the onions and potatoes. I must admit that potatoes are my favorite food and by far my favorite thing to harvest from the garden. It’s always a surprise because you don’t know how many there are or how big they’ll be. It’s like opening a Christmas present in the garden.
Of course I must have some tomato plants. Although I don’t like them fresh, I do enjoy using them for tomato sauce and pizza sauce. Cucumbers are one that I enjoy eating fresh from the garden all summer. If you see me walking around with a cumber and a salt shaker, just know I’m content. I also plan on trying carrots for the first time this year. My last one is pumpkin. Since it likes to spread out and take over, it may get booted out of the garden and planted somewhere needing weed control.
That’s it right now for the vegetables. I’m trying not to go crazy and plant everything in sight even though that’s what my heart wants to do. I just can’t keep up with it all during school.
What Fruits I’m Growing This Spring
I am keeping the fruits pretty simple this year and only planting two. There are strawberry starts ready to go in the ground when it warms up. The idea is that I’ll freeze them and make jam. In reality, that never happens because I eat them all off the vine before they even make it into the house. The other fruit that I’m trying out is watermelon. I’ve never grown them because my old garden was too small for both watermelons and cucumbers. Without a bit of space between them you get less than ideal versions of each plant when they cross pollinate.
I’m hoping to add blueberry and blackberry bushes down the road, but my two will give us a nice start.
