Soup Season
Soup is not something I usually crave, unlike my mom who can eat it all winter long. But cheeseburger soup is different because it includes all of my favorite foods. Beef, cheese, and potatoes. You can’t really go wrong with those. It’s a hearty meal that actually sticks with you, unlike those vegetarian soups my mom eats. To each their own I guess.

Serving Up Cheeseburger Soup
A loaf of crusty bread is the perfect side to go with a bowl of cheeseburger soup. I’m particularly fond of my artisan sourdough loaf. Smothered in butter and served alongside the soup makes a very hearty meal. Beer bread also pairs well with a bowl of soup.
When we are feeling fancy, we add some bacon bits to the soup thus turning it into bacon cheeseburger soup.
Of course, crackers always seem to do the trick too. Oyster crackers or saltines are my favorites. I like to crumble them up into the soup for a bit of crunch. My husband eats them on the side.
Cheeseburger Soup Recipe
Ingredients
1 pound ground beef
½ cup chopped onion
¾ cup shredded carrots
1 teaspoon dried basil
1 teaspoon parsley flakes
4 tablespoons butter
3 cups chicken broth
4 cups diced potatoes
2 cups cheddar cheese
1 ½ cups milk
1 teaspoon salt
¼ teaspoon pepper
¼ cup sour cream
Instructions
- In a saucepan or dutch oven, brown the beef.
- Next add 1 tablespoon of butter, ½ cup chopped onion, ¾ cup shredded carrots, 1 teaspoon basil, and 1 teaspoon parsley. Sauté until the vegetables are tender.
- Then add 3 cups of chicken broth and 4 cups of peeled, diced potatoes to the pot. Cover it and allow it to simmer over medium low until the potatoes are tender. This usually takes 10-12 minutes.
- While that simmers, melt 3 tablespoons of butter in a small skillet. Add in the flour and stir for 3-5 minutes until the mixture is bubbly. Then add this into the soup and cook on low for 2 minutes.
- Finally, add in 2 cups of cheddar cheese (or whatever you have on hand), 1 ½ cups milk, 1 teaspoon salt, and ¼ teaspoon pepper. Mix until the cheese melts completely. Remove from the heat before mixing in the sour cream. Now you’re ready to eat!
Freezing Cheeseburger Soup
Put the leftover cheeseburger soup into a muffin tin. Then pop it into the freezer. Once it is frozen, the pucks of soup can be stored in Ziploc bags. When you need a quick meal, reheat a couple pucks in the microwave or on the stove. I make a big pot of soup at the beginning of soup season and we are able to eat it until the snow melts in the spring. It’s faster than fast food.
