When I was young, my mom was very intentional about the food we ate. Prepackaged snacks and sweets were reserved for school lunches. But she was always inviting us to help her make a little sweet treat at home. I loved when she would pull down the brown sugar. Measuring it out was like playing with kinetic sand. And I would always sneak a nibble before she put it back in the cabinet.
My toddler is finally old enough to enjoy helping me in the kitchen. The first time he helped me make pumpkin bread last fall, I gave him a bite of brown sugar. His eyes lit up and he signed for more. It reminded me of cooking with my mom.

Homemade Brown Sugar Ingredients
Molasses is what is left after making sugar. It is the liquid left over after boiling down the sugar cane and removing the crystals. Light molasses comes from the first boiling. Dark molasses comes from the second boiling. Blackstrap molasses comes from the third boiling. The darker the molasses the more bitter it becomes. I prefer to keep light molasses on hand.
Granulated sugar is made from the crystals removed from the molasses. I often buy less refined sugar from Azure Standard and it still has some of the color from the molasses and a slightly different taste. But when used instead of the more processed white sugar, it works just the same.

- To make light brown sugar, combine 1 cup of granulated sugar and 1 tablespoon of molasses in a stand mixer. Use the paddle attachment to mix them together.
- For dark brown sugar, combine 1 cup of granulated sugar and 2 tablespoons of molasses.

Using Homemade Brown Sugar
Store your homemade brown sugar in an airtight container for up to a month. It does not contain the preservatives in store bought brown sugar, so it can go bad faster. I’ve kept mine fresh and soft for much longer than a month, but that is the general guideline. Use your own brain and judgment.
Some of my favorite recipes that use brown sugar are quick breads. Pumpkin bread and apple bread are full of those cozy fall flavors. But chocolate chip cookies are good year round in my opinion. I always keep brown sugar on hand for baking all those sweet tooth cravings.
