With Homemade Noodles?
Growing up my mom would make homemade chicken noodle soup when the weather got cool. It was a labor of love on her part. She would spend most of the day preparing the meal. It would start with making some homemade noodles. Although they are easy to make, they needed time to dry. Then my vegetarian mother would pick the meat off of a chicken, bless her heart. That’s how I knew she really loved me. When I got home from school, I would recognize the smell of the simmering soup. As if that wasn’t enough she knew that I only liked real mashed potatoes, not the instant ones. So she would peel and boil potatoes to go with the homemade chicken and noodles.
After getting married, I moved away. When I would come back to visit, Mom would always ask what I wanted to eat while home. She would have a list of suggestions. If she mentioned soup, I responded by asking if it would be with homemade noodles. She would say yes and I would proceed to ask if there would be homemade mashed potatoes too. The answer was always, “I guess. Just for you” Moms are the best aren’t they?
Although we cook a bit differently than each other, we both love these easy homemade noodles for soup. They make for the absolute best chicken noodle soup.

About Homemade Chicken Noodle Soup
This soup can be made completely from scratch or with some prepackaged ingredients from the store. Either way this soup will be amazing.
If you want to make this completely from scratch, start by cooking a whole chicken in the Instant Pot. This is my favorite way to cook chicken. We do it about once a week, so that we have it to use for other meals.
Then take the bones and skin along with any carrot peels and onion skins and use the Instant Pot to make some delicious bone broth. This has some amazing health benefits and is way better than the store bought stuff. Just saying.
Egg noodles will work fine in this recipe and I often make it that way, but my favorite way is with homemade noodles. They are simple to make and really add something special to the meal.

Homemade Chicken Noodle Soup Recipe
Ingredients
1 batch of homemade noodles
Meat from 1 chicken
2 cups carrots
½ onion
8 cups of bone broth
½ cold water
¼ cup flour
Instructions
- If you are using store bought noodles and broth, skip this step. The day before you want to eat homemade chicken noodle soup, you need to start preparing. If you’re making homemade noodles, get them started first. Then go ahead and cook a whole chicken in the Instant Pot. When the chicken is cooked. While that cooks, peel and chop the carrots and onions. Save the scraps for broth. Pick the meat off and set aside. Put the bones, skin, and vegetable scraps into the Instant Pot to make bone broth. I don’t wash it out first, I just toss it all back in the pot.
- The following day, bring about 8 cups of broth to a boil. I don’t really measure, I just pour in an entire batch of the homemade bone broth.
- Once the broth is boiling, add 2 cups of sliced carrots and ½ of an onion chopped. This is about 4 carrots depending on the size. Now it’s time to add the noodles as well. Allow it to simmer for 10 minutes.
- Next add in the cooked chicken. Mix together ½ cup of cold water and ¼ cup of flour in a measuring cup. Then add it to the soup to thicken it. Cook and occasionally stir until the soup is bubbly. Cook for another 1 to 2 minutes.
- It’s finally time to serve the homemade chicken noodle soup. I recommend serving it over a bed of mashed potatoes.
