These easy, freezer, breakfast burritos are a family favorite around our house. They are packed with enough protein to keep you going until lunchtime. They are easy to prepare and not to mention freezer friendly!

I have never been a morning person. Therefore, I try to remain under the covers for as long as possible before having to get up. That means, I don’t have time to cook a homemade breakfast before leaving for work. As a teacher, I don’t have the luxury of stopping for a snack midmorning. So of course, I’m starving by lunchtime. This is especially difficult after a long break while my stomach adjusts to the school schedule.
However a yummy breakfast burrito and a cold glass of milk will get me out the door on time and keep me full until lunch. It beats a bowl full of cold cereal any day. No grumbly tummy for me!
My husband has been know to slip one in his pocket before leaving for work. Despite a 30 minute commute, when he arrives the burrito is still frozen. Whenever he gets settled, he slips down to the office kitchen and heats it up. He appreciates that it is easy to take with him and that it does not require dirtying any dishes.

Make Ahead Easy Freezer Breakfast Burritos
I make these freezer breakfast burritos on the weekend or during a school break. It helps make the first week back to school a bit less stressful. When I know that I won’t be home, I will make up enough for my husband to have a hot breakfast everyday while I’m gone. Often, I whip up a batch when I see that we have extra eggs or leftover ham. This prevents the eggs from going to waste and it helps us to use up leftover ham.
This process is even easier when we have breakfast for dinner. I simply make extras of whatever we are eating. Then after dinner, I put the extras in tortilla shells. They get tossed in the freezer and make a deliciously, warm breakfast for later.
This breakfast burrito recipe is super quick to put together. I usually double or triple the recipe in order to have enough for both my husband and I.
When we were long distance, I would make him a month’s worth of breakfast burritos when I came to visit. He always knew I was due for another visit when the breakfast burritos ran out.

Easy Freezer Breakfast Burrito Ingredients
- 5 Large tortillas
- 5 Scrambled eggs
- 5 Strips of bacon
- 3 Hash brown patties
- 1 1/2 Cups of shredded cheese
Easy Freezer Breakfast Burrito Instructions
- First, scramble 5 egg and fry 5 strips of bacon.
- While you scramble the eggs, bake 3 hash brown patties according to package directions.
- Once cooked, cut the hash browns into bite sized pieces.
- Lay out 5 tortillas, in order to evenly divide the ingredients.
- Evenly divide the scrambled eggs, cheese, hash browns, and bacon between the tortillas.
- Wrap the tortillas around the ingredients.

Freezing the Easy Breakfast Burritos
The breakfast burritos freeze and reheat quite well. When laying out the tortillas, place each one on a piece of parchment paper. After the ingredients are wrapped in the tortilla, place the burrito in one corner of the parchment and roll up the burrito. Finally, fold in the ends and place the wrapped burrito in a plastic bag. Gallon bags work quite well for this. Once full and frozen, they will lay flat and can be stacked.
If you are making multiple types of breakfast burritos, label the bag or parchment paper with a permanent marker. Labeling will help each family member find the type of burrito that they want. If you are anything like me, this also helps you know what’s inside the bag when you clean out the freezer a month later. For this reason, I suggest putting the date on the bag as well.
To reheat, place the still wrapped burrito in the microwave for 1 minute. Turn it over and cook for an additional 30 seconds to a minute, until the middle is warm. Once in awhile, i will bite into a frozen bit. When that happens, I simple put the burrito back in the microwave.
Breakfast Burrito Swaps
You can swap out the bacon in this recipe for any other type of breakfast meat. My husband is particularly fond of using bacon or cubed ham. Sausage crumbles are also quite delicious. Grilled steak is special treat to put inside. My mom is a vegetarian, so she will use meat replacements or simply fill it vegetables.
You can swap out the hash brown patties for any other type of fried potato. I simply prefer the patties because they are convenient and easy to prepare. I can bake them while I scramble the eggs, which eliminates a pan on the stove that I have to keep from burning. In the past I have switched out the patties for shredded hash browns. Shredded hash browns make for a crunchier potato filling. If you are texture eater, this may appeal to you. Tater tots are also an easy swap. If we have left over tater tots, I save them to put in the burritos. Though it is unusual, left over fried potatoes and onions make a wonderful swap as well.
Easy Freezer Breakfast Burrito Additions
My husband does not eat vegetables if he can help it, for this reason I do not include them in the breakfast burritos. That does not mean that they are not an option though. Adding sautéed bell peppers and onions would be scrumptious, in my opinion.
Once you reheat the breakfast burrito, you can add some salsa or a dollop of sour cream. Another idea is opening it up in order to smear some avocado or guacamole inside.
This basic breakfast burrito can be customized to fit the pallet of everybody in your family.

I do not eat meat, but I love to make these with onions and bell peppers. I also add tofu that is crumbled and fried until it resembles sausage. This is my favorite on the go breakfast.
For eaters that don’t want veggies, a little shredded carrot cooked with the meat will add some extra nutrition without altering taste or texture.
