With Homemade Noodles?
Growing up my mom would make homemade chicken noodle soup when the weather got cool. It was a labor of love on her part. She would spend most of the day preparing the meal. It would start with making some homemade noodles. Although they are easy to make, they needed time to dry. Then my vegetarian mother would pick the meat off of a chicken, bless her heart. That’s how I knew she really loved me. When I got home from school, I would recognize the smell of the simmering soup. As if that wasn’t enough she knew that I only liked real mashed potatoes, not the instant ones. So she would peel and boil potatoes to go with the homemade chicken and noodles.
After getting married, I moved away. When I would come back to visit, Mom would always ask what I wanted to eat while home. She would have a list of suggestions. If she mentioned soup, I responded by asking if it would be with homemade noodles. She would say yes and I would proceed to ask if there would be homemade mashed potatoes too. The answer was always, “I guess. Just for you” Moms are the best aren’t they?
Although we cook a bit differently than each other, we both love these easy homemade noodles for soup. They make for the absolute best chicken noodle soup.

Easy Homemade Noodles for Soup Recipe
Ingredients
2 eggs
¼ cup milk
¾ teaspoon salt
¼ teaspoon ground thyme
2 cups flour
Instructions
- First mix together 2 eggs, ¼ cup of milk, ¾ teaspoon salt, and ¼ teaspoon of ground thyme. I use my KitchenAid mixer for this.
- Then start adding flour until the dough is stiff. It takes about 2 cups. I recommend adding the first cup and then slowly adding in the second cup.
- When the dough is well combined and stiff, cover the dough with a tea towel and let it rest for 10 minutes.
- Lightly flour a surface to roll the dough out on. I suggest doing this with only half of the dough at the time. Roll out the dough into roughly a 16 x 20 rectangle. Let it sit for 20 minutes.
- Now slice the noodles into the desired width. Then cut them into your preferred length.
- Place the noodles on a drying rack and allow them to dry for 2 hours.
- To cook, place the noodles in boiling broth or water for 11-12 minutes.

Tips for Making and Using Easy Homemade Noodles for Soup
If you have a pasta attachment for your mixer then this process will be much faster.
The easiest way to cut the noodles by hand is with a pizza cutter. Good for more than just pizza.
These noodles taste best when cooked in broth. If for some reason you wish to cook them in water, that is fine too. I just like the flavor the broth adds.
I like to cut the noodles a bit thicker than store bought noodles. That’s probably because my mom did them that way.
If you don’t have a pasta drying rack a simple cooling rack will work.
