Birthday Pie
For many years now, my birthday dessert request has been a pumpkin pie. It is my favorite dessert without a question. Also works for breakfast and snacks. And if you eat enough pie, it can even be lunch or dinner! It’s a well “rounded” meal. I like to have my birthday pie with lots of whipped topping and sprinkles if they’re available! For my birthday there is always a real pumpkin pie, but we enjoy this no bake pumpkin pie throughout the fall and winter.

No Bake Pumpkin Pie Recipe
Ingredients
1 cup pumpkin pureé
¼ cup sugar
4 ounces softened cream cheese
8 ounces whipped cream
2 teaspoons cinnamon
1 teaspoon pumpkin pie spice
½ teaspoon nutmeg
3.4 ounces instant vanilla pudding
½ cup milk
1 graham cracker crust
Instructions
- First combine 4 ounces of softened cream cheese, ¼ cup sugar, and 4 ounces of whipped cream together using a hand mixer. Then spread it evenly in the bottom of the pie crust.
- Next mix together the pudding mix and ½ cup milk. When it starts to thicken add in 1 cup of pumpkin pureé, 2 teaspoons cinnamon, 1 teaspoon pumpkin pie spice, and ½ teaspoon nutmeg. Spread it over the first layer of the pie.
- The final layer is just whipped cream. Spread it evenly over the top. I like to sprinkle some additional pumpkin pie spice over the top to make it pretty. Then put the no bake pumpkin pie in the fridge to chill for at least an hour before eating.
Can You Make No Bake Pumpkin Pie Ahead of Time?
Although it will not last on the counter, no bake pumpkin pie will last for about 3 days in the fridge. So yes, you could make it up a couple days ahead of time, as long as you aren’t expecting leftovers.
It can be frozen without the final whipped cream layer, if need be. This will help it last even longer, but I find the crust to become a bit soggy after thawing.
