A Broadening Palette
Growing up I loved peanut butter and jelly sandwiches. Actually I still do because I’m a child in an adult’s body. My family always used grape jelly. I actually had no idea there were other options. The only variation I knew about was having the peanut butter and jelly in separate jars or a single jar. And the single jar was only for camping.
During VBS one year I was served a peanut butter and jelly sandwich with strawberry jelly. It may sound dramatic, but my life was forever changed that day. I had to ask what was on the sandwich because of course I had no idea. Ms. Gayle kindly informed me that it was strawberry jelly. I went home that night to tell my mom about this entirely new meal. She of course laughed at me, but did buy some strawberry jelly at the store next time.

Instant Pot Strawberry Jam Recipe
Ingredients
4 pounds fresh or frozen strawberries
4 cups sugar
4 tablespoons lemon juice
Instructions
- If you are using fresh strawberries, wash them first. Then cut them in half.
- Put all of the strawberries, 4 cups of sugar, and 4 tablespoons of lemon juice in the Instant Pot. Let it sit for 30 minutes.
- Use this time to sanitize your jars and lids in boiling water if you plan on canning the Instant Pot strawberry jam.
- Now put the lid on the Instant Pot and set it to sealing. Use the manual mode to set it to cook for 3 minutes. Then do a natural release.
- Use a potato masher or handheld blender to mash up the fruit.
- Switch the Instant Pot to sauté mode to finish cooking down the jam. The jam is done when it passes the jam test. Coat the back of a spoon with jam. Run your finger down the spoon to make a gap. If the jam stays in place, it’s ready. If it runs back together then it needs to cook longer. Mine took about 50 minutes.
- You can either freeze it, can it, or eat it up now.
Canning Instant Pot Strawberry Jam
- Sanitize your jars, lids, and rings by placing them in boiling water for 10 minutes. I put the jars in the pot of water that I will use to can and bring it all to a boil at once. Remove and dry the jars when you are ready to fill them with Instant Pot strawberry jam.
- Fill the hot jars with hot jam. Leave about a half an inch of headspace.
- Wipe the rim of the jar to remove any food before placing the lid and ring on top.
- Gently place the jars back in the canner or pot of water. The water should cover the tops of the jars by about an inch. Boil for 10 minutes. Remove with a jar lifter and allow them to cool. You will start to hear the lids pop. When they are cooled, check the seal by pressing down on the lid. If you press on the center it shouldn’t flex. Store them without the rings for up to a year.
Enjoying Instant Pot Strawberry Jam
As previously mentioned, Instant Pot strawberry jam is wonderful on a peanut butter sandwich. Actually, sourdough pancakes make wonderful peanut butter sandwiches. Although I’m not too picky so I’ll smear it on a sourdough English muffin or waffle as well.
I like to give a jar of it with a loaf of sourdough bread as a small gift to people that I don’t know what to buy for. Nobody will turn down homemade bread and jam.
