Breakfast for the Freezer
Breakfast must be easy at our house. I am not an early riser by nature and it takes awhile for me to get going in the morning. That is why I love making large batches of freezer friendly breakfasts like burritos, sandwiches, bagels, and chocolate chip oatmeal muffins. Doing so makes sure my husband is fed before work and I can easily stumble into the kitchen and eat while still trying to wake up.

Chocolate Chip Oatmeal Muffin Swaps
The chocolate chips can be swapped out for any other baking chip. Peanut butter, butterscotch, and white chocolate are all yummy too.
If you cannot eat eggs, then replace them with ½ cup unsweetened applesauce. I prefer eggs for some protein.
Instead of milk, you can use almond milk, oat milk, soy milk, or powdered milk. We are not a milk drinking family, so I’ll often mix together some powdered milk to use in this recipe.
The coconut oil can be replaced with butter. Although the chocolate chip oatmeal muffins do not turn out exactly the same. They still taste good though.

Chocolate Chip Oatmeal Muffins Recipe
Ingredients
3 cups oats
1 tsp cinnamon
¼ tsp salt
1 tsp baking powder
2 eggs
¼ cup syrup
2 mashed bananas
1 tsp vanilla
1 cup milk
¼ cup melted coconut oil
1 cup chocolate chips
Instructions
- In a large bowl mix together all of the ingredients. Begin with 2 eggs and 2 bananas. Once those are mixed well, add in 3 cups oats, 1 teaspoon cinnamon, ¼ teaspoon salt, 1 teaspoon baking powder, ¼ cup syrup, 1 teaspoon vanilla, 1 cup milk, and ¼ cup melted coconut oil. Lastly mix in 1 cup chocolate chips.
- Preheat the oven to 350 degrees. Line a muffin tray with 12 silicone muffin liners. I’ve found these to work best to prevent things from sticking. Fill the muffin liners, you can fill them up most of the way because they do not rise much if at all.
- Bake for 30 minutes.

Freezing Chocolate Chip Oatmeal Muffins
Once the chocolate chip oatmeal muffins have cooled, place them on a parchment line baking sheet. Pop them in the freezer to flash freeze. After they are frozen, they can be placed in a plastic bag and stored in the freezer until breakfast time.
To reheat, pop them in the microwave for about a couple minutes. If they are already thawed, they’ll only need 1 minute.
