I’ll Eat Eventually
Whenever I make breakfast for dinner, I always feel like I stand in the kitchen for hours flipping pancakes, frying bacon, and scrambling the eggs. What sounds like a quick, easy meal for those busy evenings involves a lot of hands-on time. Even just making food for me and my husband takes forever. Since I’m not about that life, I’ve been trying to find ways to be more efficient in the kitchen.
It began when I discovered that I could cook the bacon in the oven and then not have to clean up a greasy stove. Plus it was all finished at the same time. Since that discovery, we have always made oven bacon. But eggs were still a pain. So one evening, I decided to toss them in the oven as well. They came out perfect! I’ve recently been working on sheet pan pancakes, so that I can put all of the breakfast in the oven. I may still have a sink of dirty dishes, but at least I can load the dishwasher while everything cooks in the oven.

Eggs got a bad rap back in the 70’s because of the amount of cholesterol they contained. Then back in 2020 a study was done and concluded that eggs weren’t as bad as they had been made out to be. In fact, they found that eating eggs reduces your risk of cardiovascular disease.
In fact, eggs are like nature’s multi-vitamin. They are packed with protein, vitamins, and minerals. They’ve got choline, vitamin A, vitamin B12, folate, vitamin D, riboflavin, biotin, zinc, calcium, selenium, copper, iron, iodin, phosphorus, and DHA, Plus some. Which makes sense when you consider the purpose of the egg is to grow and sustain a baby chick. Every pregnant mother is told to make sure she gets choline and folate for her baby’s brain. So consider eggs as one of the good guys instead of the cholesterol bad guys. Turns out God makes the best food.

Oven Scrambled Eggs Recipe
Ingredients
6 eggs
½ cup yogurt
½ teaspoon salt
1 tablespoon butter
Instructions
- With a whisk or in the blender combine 6 eggs, ½ cup plain yogurt, and ½ teaspoon salt.
- Use 1 tablespoon of butter to grease an 8×8 pan. Then pour in your eggs.
- Bake at 350 degrees for 10-15 minutes. Sometimes I’ll just throw mine in with the bacon which cooks at 400 degrees. Just keep a close eye on them to make sure they don’t overcook if you do this. It does help streamline things in the kitchen.

Topping Oven Scrambled Eggs
You can totally jazz up your scrambled eggs if you wish. I like to add cheese, but some other options are ham, bacon bits, diced onions, or peppers. We are just a household of picky eaters so we stick to cheese.
You can always swap out the plain yogurt for milk, sour cream, or cottage cheese. I tend to use whatever I have on hand or whatever is going to spoil first.
