I’ll Take Some Honey, But Keep the Bees
My mom has several bee hives. She asked about putting a hive on our property. I thought it sounded like a great idea, but my husband disagreed. He objected to having to mow around it, so we have no beehive. But my mom does keep me well supplied with honey anyways. Over the last several years their hives have grown. What started as one hive has now multiplied into many hives. Maybe someday I can convince my husband to let us have a hive because bees would be wonderful for the garden.

What Makes Honey So Healthy?
Raw, local honey is one of my favorite superfoods. It can help with a cough, scrape, sore throat, or allergies. Honey is full of antioxidants and has antibacterial and antiviral properties.
Research has shown that honey does not increase your blood sugar as much as sugar does. Honey increases your adiponectin levels which is a hormone that regulates your blood sugar and inflammation. The antioxidants also help protect against diabetes.
People who regularly consume honey have been shown to have lower blood pressure, have healthier fat levels in their blood, and even better cholesterol. Some of this is thought to come from the propolis which is what the bees make with tree sap. It is also thought that honey can help with oxidative stress on the heart.

Whipped Honey Recipe
Ingredients
½ cup honey
1 teaspoon vanilla extract
¼ teaspoon cinnamon
Instructions
- Put ½ cup honey, 1 teaspoon of vanilla extract, and ¼ teaspoon cinnamon into the mixer. Add the whisk attachment and turn it up to high speed. I let mine go for about 5 minutes, but the longer you whip the honey the lighter it becomes
- When the honey turns white that means that it is done. Scrape it into a jar or honeypot.

Eating Whipped Honey
Whipped honey can be used on top of waffles, peanut butter sandwiches, toast, or biscuits. Because it has been whipped, it is easier to spread than regular liquid honey.
It is also yummy when used as a glaze for meats. Honey glazed ham anyone?
If your honey has started to crystalize, then it’s time to make whipped honey. Slightly crystalized honey actually makes the best whipped honey. If the crystals are too much then heat the honey slightly before whipping it.
If you prefer, you can make whipped honey without the added vanilla and cinnamon. I add both because I find it extra yummy that way.
