When I was young, Mama would make me mayonnaise sandwiches. It was just bread and mayo, but I thought it was fine dining. Of course there wasn’t much nutrient in that fancy sandwich, so my mom wouldn’t let me eat it on a regular basis. But Mama would always indulge my cravings.
When my dad got remarried, they served sandwiches at the reception. I did not like anything on them except for the mayo. So I took everything off and ate bread and mayonnaise like the fancy lady that I am. He was not impressed.

Homemade Mayonnaise Swaps
I like to use avocado oil because the flavor is very mild. If you do not have or do not like avocado oil, then give olive oil a try. You’ll notice the taste of the olive oil more than you do the avocado oil.
We have our own chickens and I’m comfortable consuming raw egg from our flock. This is controversial, so make your own choice regarding your family’s health.
I used dijon mustard because that is what I had in my fridge. Any mustard will work to make homemade mayonnaise though.

Homemade Mayonnaise Recipe
Ingredients
1 egg
1 cup avocado oil
1 teaspoon lemon juice
½ teaspoon mustard
½ teaspoon salt
Instructions
- First add 1 egg, 1 cup avocado oil, 1 teaspoon lemon juice, ½ teaspoon mustard, and ½ teaspoon salt to a wide mouth pint mason jar.
- Next use an immersion blender to blend the egg at the bottom of the jar until it is white.
- Then slowly move the immersion blender up in the jar to mix the oil and other ingredients together. This should take about 2 minutes.

Storing Homemade Mayonnaise
You can keep this homemade mayonnaise in the fridge for up to a week. I just put a plastic lid on the mason jar that I made it in.
It makes great turkey subs, ranch dip, salad dressing, and grilled cheese. And of course I like to smear a little on my sourdough sandwich bread for a mayonnaise sandwich.
