I have been on a mission to replace all of our processed foods with a healthier homemade version. My husband does not do well with enriched flour, so baked goods were my top priority. He loves muffins, especially the Little Bites. We would always grab some when we travelled because they made an easy breakfast. But I knew that it wouldn’t be that hard to make a healthier version at home without dyes, preservatives, or enriched flour.

Why Sourdough?
Grains contain phytic acid, but our bodies don’t really process it well. Phytic acid prevents our bodies from absorbing the nutrients from our food. Fermentation gets rid of most, if not all of the phytic acid, in the grains before we eat them. The fermentation process also helps break down some gluten, so although the bread isn’t gluten free it does have a lower gluten content. This allows people like me, who are sensitive to gluten, to eat sourdough. It also acts like a probiotic, which makes it great for gut health. Sourdough has prebiotic characteristics as well, which simply means that the good bacteria in your gut enjoy eating the fiber.

Sourdough Discard Little Bites Recipe
Ingredients
¼ cup melted butter
¾ cup milk
¼ cup sourdough discard
½ cup plain greek yogurt
1 teaspoon vanilla extract
1 egg
½ cup sugar
1 ¾ cup flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 cup mix-ins
Instructions
- First mix together ¼ cup melted butter, ¾ cup milk, ¼ cup sourdough discard, ½ cup plain greek yogurt, 1 teaspoon vanilla extract, and 1 egg. You can use a mixer or a danish dough whisk.
- Next add in ½ cup sugar, 1 ¾ cup flour, 1 teaspoon baking powder, ½ teaspoon baking soda, and ½ teaspoon salt. Mix until just combined. Overmixing will cause the sourdough discard little bites to become tough.
- Then fold in 1 cup chocolate chips or fruit or ½ cup sprinkles. Pour into a mini muffin pan.
- Bake at 350 degrees for 15-20 minutes.

Freezing Sourdough Discard Little Bites
First you must allow the sourdough discard little bites to cool completely. Then transfer them to a parchment lined baking sheet. Place it in the freezer for 2 hours or until completely frozen.
Then you can either place all of the muffins in a large plastic bag or several in each sandwich bag. That latter is better for on the go or kids that need help with portions.
Pull them out of the freezer the night before you want to eat them. If you forget, then you can always pop them in the air fryer or microwave for a couple minutes to thaw.

These came out perfect! I’ve made a few different sourdough discard muffin recipes but this one is the best by far. I made them in a normal size muffin tin and it took about 18 minutes for the larger size.
This recipe is too high in flour and too low in fat and sugar. I should’ve went with my gut since I bake a lot of muffins but got excited since it was sourdough. Made them for my kids who did like them but if I were to make these again I would tweak the ratio of dry and wet ingredients l. Also I used mini muffin liners…. Was a mistake since this is a low fat muffin they stuck a lot most just ate the tops. Do not bake for 15-20 minutes!!! Mini muffins should only take around 10 minutes. Only got about 35 mini muffins
