What’s for Dinner? Chicken Stuff!
When we first got married, I did not know how to cook. We pretty much ate the same meals every week and normally the directions were on the box. Over time and with a lot of Pins, our menu options slowly began to grow. Trouble is that my husband and I have the pallets of toddlers. So many recipes needed to be altered.
I found a chicken enchilada casserole recipe, but it called for green sauce. Neither of us thought that sounded appetizing, so I switched it up a bit. We swapped the green sauce for some red enchilada sauce and the canned chicken for shredded chicken. We now have a delicious meal we refer to as the chicken stuff and keep in the freezer at all times. Needless to say this easy chicken enchilada recipe has become a staple at our house.

Serving the Easy Chicken Enchilada Recipe
We prefer to serve this chicken enchilada filling in a tortilla and smothered in queso. This is not the only way to eat this yummy mixture though. Sometimes my husband just eats it with a spoon from a bowl. It works on nachos or tacos too.
This easy chicken enchilada mixture can be served with chips and salsa or guacamole. Corn is a good vegetable when serving Mexican food. I love a little black beans and rice or bean dip on the side. For dessert some fresh mango or papaya are healthy and delicious options.
Easy Chicken Enchilada Recipe
Ingredients
1 can enchilada sauce
Meat from 1 chicken
2 cups shredded cheese (cheddar is always a safe bet)
8 ounces cream cheese
Instructions
- Start by cooking a whole chicken in the Instant Pot and pick all of the meat from the bones.
- Put the meat, 1 can of enchilada sauce, 2 cups of shredded cheese, and 8 ounces of softened cream cheese in the stand mixer. Use the whisk or flat paddle to mix up the ingredients. This allows you to shred the chicken while you mix. I now exclusively shred chicken with the mixer. Best discovery ever!
- Once well combined, put everything into a greased pan. We divide it into a loaf pan and a metal freezer pan. If you plan to eat the whole recipe I suggest an 8×8 pan.
- Bake for 30 minutes in a 350 degree oven. The top will get bubbly and darker in color when it’s done.
Freezing the Easy Chicken Enchilada Recipe
I find this recipe does very well in the freezer. Place it in a greased, freezer-safe pan. Make sure to label it, so that you know what it is later. Pull it out to thaw the night before. If it’s not completely frozen by dinner time, just adjust the cooking time by a few minutes.
We like to use disposable metal pans. They stack well in the freezer and are oven safe a well. Dinner with no dishes is always a win in my book.
