Near the holidays, my brother and I would spend the night with our Mama and Papa. The evening would be full of baking, candy, McDonald’s, and Christmas lights. It was one of my favorite traditions. We’d make fudge, buckeyes, and these easy peanut butter cookies. Then of course they would let us eat our fill. After driving through the Christmas lights, we’d spend the evening watching movies on the air mattress in the living room.

Easy Peanut Butter Cookies
These easy peanut butter cookies are gluten free and dairy free, making them a great, allergy-friendly option. As long as eggs and peanuts aren’t on your allergy list.
I like to make up a double batch of dough. I’ll flash freeze some balls of dough and bake the rest. It makes it quick and convenient to bake some cookies.
Easy Peanut Butter Cookies Recipe
Ingredients
1 cup peanut butter
1 egg
1 cup sugar
1 tablespoon vanilla extract
Instructions
- First preheat the oven to 350 degrees and line a large baking sheet with parchment paper.
- Then using a hand or stand mixer, mix the peanut butter, sugar, egg and vanilla on low speed until well combined.
- Next with a medium cookie scoop, scoop about 1 ½ tablespoons of dough 1 ½ inches apart onto the baking sheet. If you don’t have a cookie scoop, drop the dough with a spoon.
- Flatten the dough balls with the tines of a fork, making a criss-cross pattern on the cookies.
- Bake the cookies for 10-12 minutes until they are golden around the edges. Allow the cookies to rest on the counter for 2 minutes before transferring them to a cooling rack.
