The Meatloaf Secret
Growing up my mom made a wonderful meatloaf. She always made it in a red silicone pan and had extra sauce on the side. Often it was served with mashed potatoes and corn. If she was feeling really ambitious we would get a roll as well. It was a meal that was never complained about because it was so delicious. It was a staple dish at her house.
After getting married, I called her one day asking for the meatloaf recipe. Of course nothing was measured or precise, so I had to do my best and hope it was edible. Eventually I got it right and measured out the ingredients, so that I could repeat the process. During that phone call, she told me the secret to a good meatloaf was more meat and less loaf. This meatloaf recipe is so easy and so delicious that it should be a staple in every home. Don’t knock it until you try it.
I like to make it for my husband in particular because he refuses to eat vegetables. I can sneak a few into the meatloaf without him ever knowing. I’ve found the best way to hide onions is in beef. After chopping them up and sauteing them, he has no idea that there’s any onion in the meatloaf at all.

Easy Meatloaf Recipe
Ingredients
Meatloaf
1 pound ground beef
1 egg
½ onion, chopped
¼ cup ketchup
1 cup bread crumbs
1 teaspoon salt
¼ teaspoon pepper
½ teaspoon parsley
Sauce
½ cup ketchup
¼ cup mustard
¼ cup brown sugar
Instructions
- First mix all of the meatloaf ingredients together in a bowl. Do not overmix, just mix it enough to combine the ingredients. Your hands make the best mixers for meatloaf.
- Next put the meatloaf in a lightly greased loaf pan.
- Then form it into a loaf by pressing it down in the pan. Use your fingers to create a space between the meat and the side of the pan. Use your index finger to create an indentation on the top. This will help hold the sauce.
- Now bake it for 40 minutes at 350 degrees.
- While the meatloaf is baking, go ahead and make up the sauce. Mix everything together in a measuring cup or mixing bowl.
- When the meatloaf is done, drain the juices. Mine never has much to drain, so sometimes I’ll skip this step.
- Finally pour the sauce over the top of the meatloaf and bake for another five to ten minutes.
