I never understood why my mom had leftover-night so often. I hated it. Nothing in the fridge ever sounded good. I just wanted warm food that I had not already eaten that week. Unless my favorite meal was the leftover buffet, I would normally pick a bean burrito.
Now as an adult, I understand the need for leftover-night. Cooking every night after work is exhausting. Plus, if you don’t have leftover-night, then the fridge fills up with little containers of food. I still don’t enjoy it, but it’s a necessary evil of being an adult.
My solution is simple. Cook something basic that can be used multiple times. If I make a whole chicken in the Instant Pot, we can have chicken enchiladas one night and chicken, bacon, ranch wraps another. Remodeled leftovers as I like to call them. It’s the same thing, but different. It’s enough to trick my brain into eating leftovers without whining about it.

Easy Homemade Chicken, Bacon, Ranch Wrap Recipe
Ingredients
Tortilla
¼ cup Chicken
2 slices Bacon
1 Tablespoon Ranch Dressing
1 Leaf of Lettuce
2 Tablespoons Shredded Cheese
Instructions
- Cook the chicken. I put mine in the Instant Pot with some salt and pepper. I use a whole chicken, but chicken breasts work well too. Grilled chicken, rotisserie chicken, or canned chicken are other options. The idea is to use whatever is on hand.
- Let the chicken cool enough to be handled. Shred or chop the meat. Chopping is easier and faster, I think.
- Fry up some bacon while you are waiting on the chicken. Or use that leftover bacon from breakfast. In a pinch I’ve used the bacon bits I keep in the freezer.
- Rinse and dry a lettuce leaf. Then place it in the tortilla.
- Put the chicken in the lettuce leaf.
- Top it with some bacon. Sprinkle on some cheese. Then drizzle the ranch dressing over the top.
- Lastly, roll it all up and enjoy!
