You know it’s meant to be and the love is for real when you both have the palette of a picky toddler. That would be me and my husband. Although I try more foods and eat more vegetables than he does, we could both sustain on chicken nuggets and mac and cheese. Maybe toss in a cheese pizza every once in a while. Our parents tried, but the picky palettes prevailed.
When we first got married, I had no idea how to cook. Unless it came from a box with detailed directions we didn’t eat it. We soon got tired of hot dogs and frozen pizza. I slowly ventured into the unknown world of cooking. The problem was finding recipes that we liked. I was not able to vere from the recipe because I lacked the skills and confidence to do so. When you eat like a toddler there’s not much for you to make from a cookbook. I pressed on and gained some confidence. I mean that I made several meals that could not be consumed and watched a lot of Youtube videos.
Eventually I arrived at where I am now. Still picky, but able to adapt recipes into something that we both enjoy. One such recipe is the simple chicken parmesan subs. Truly delicious, simple, and healthy. In fact, it’s one of the healthiest meals we eat. It’s not spicy and doesn’t have any weird flavors or textures. Therefore, it’s perfect for picky eaters.

Simple Chicken Parmesan Subs Recipe
Ingredients
4 teaspoon grated parmesan cheese
1 teaspoon cornmeal
⅛ teaspoon oregano
2 chicken tenderloins or 1 chicken breast
1 teaspoon olive oil
2 ciabatta rolls
½ cup marinara
2 slices swiss cheese
¼ teaspoon salt
Instructions
- First mix together 4 teaspoons of grated parmesan cheese, 1 teaspoon of cornmeal, ⅛ teaspoon of oregano, and ¼ teaspoon of salt. I like to do this on a plate because it makes the next step easier.
- Next rinse the chicken tenderloins and pat them dry. Put them in a bowl with a teaspoon of olive oil. Mix them around until they are covered in oil.
- Then move them to the plate and cover them with the parmesan and cornmeal mixture.
- Now put the chicken on a parchment lined baking sheet and bake at 400 degrees for 12 minutes or until the internal temperature reaches 165 degrees.
- Meanwhile, cut open the ciabatta rolls. Put marinara on both sides of the roll.
- Finally, pull the chicken out of the oven. Put it on the bottom half of the ciabatta roll with a slice of swiss cheese and the other half of the roll on top. Put the entire sandwich back in the oven for 2 minutes or until the cheese melts.
