Nothing Beats Crock Pot Soup
As I’m writing this, it’s a sweltering hot September day. Although the house is decorated for fall and I’ve got a fall diffuser blend going in every room it by no means feels like fall outside. Despite the weather, I’m so ready for fall. Soups, pumpkins, leaves, hot tea. That means that it’s time to start adding soup to the regular dinner menu.
Cooking is not my favorite activity. I do it out of necessity and deliciousness, but I like things to be as efficient as possible. I’ve learned that one way to simplify the weekly cooking is to make a whole chicken in the Instant Pot. Then I can make broth and several chicken dishes without much hands-on time in the kitchen. One of my fall and winter favorites is Crock Pot chicken tortellini soup. I make it up the night before and just toss it in the Crock Pot before work. Then when I get home, dinner is fifteen minutes away.

Why Soup with Bone Broth?
I’m a teacher which means that I am willing to do anything to prevent sickness. Germs seem to multiply in the classroom until everybody is sick. Bone broth has some amazing benefits, one of which is boosting the immune system. Crock Pot chicken tortellini soup uses this healthy broth base and makes a very filling dinner.
- Amino Acids, Vitamins, & MInerals : When the bones and cartilage are boiled the collagen is broken down. This releases amino acids that are good for you. The most prevalent of which is gelatine. The bones also release calcium, phosphorus, magnesium, and trace minerals.
- Promotes Digestion: The gelatine and other amino acids help the food move through your intestines. They team up with the water in the foods to get things moving.
- Immune Support: Much of our immune system is in our gut. The amino acids can protect against leaky gut, which means the bad stuff keeps on going towards the exit instead of back into your body. Plus the amino acids give your body what it needs to keep you healthy.
- Young & Skinny: Although the collagen breaks down into amino acids when cooked, the amino acids help the body produce collagen when consumed. Which means the fountain of youth should be spewing bone broth. It has also been shown to help with weight loss
- Feel Young: The collagen from chicken bones not only keeps you looking young, but it also makes you feel it too. It can help with osteoarthritis pain and stiffness and other orthopedic injuries.

It has also been shown to help memory and mental functioning. When you’re not asleep after eating it of course.

Crock Pot Chicken Tortellini Soup Recipe
Ingredients
½ onion
3 carrots
1 pound chicken
1 clove garlic
¾ teaspoon salt
¼ teaspoon pepper
½ teaspoon dried thyme
1 teaspoon dried parsley
8 cups bone broth
24 oz package of cheese tortellini
Instructions
- First chop the onion and garlic. I like to do both in the Slap Chop. My husband hates onions and that’s how I hide onions from him.
- Then peel and slice the carrots. I cut the bigger slices in half.
- The chicken can be fully cooked and shredded or raw. I use whatever I have on hand, but that’s normally fully cooked and shredded.
- Next add in the spices and bone broth. If the broth is homemade and doesn’t have any salt, then you will want to use more than ¾ teaspoon. Store bought broth is already pretty salty already so ¾ teaspoon will be plenty.
- Cook on low for 6-8 hours or high for 3-4 hours.
- When done, shred the chicken if not already shredded. Put it back in the Crock Pot along with the cheese tortellini.
- Cook on low for about 15 minutes. When the tortellini are puffy the soup is ready to eat. Enjoy!

Freezing Crock Pot Chicken Tortellini Soup
Since there are only two of us eating the soup it would last for days. We would tire of it long before we finished all of the leftovers. I will take the leftover soup and divide it into two quart ziplock bags. Let all of the air out and lay them flat in the freezer. When they are frozen you can stand them up to save space. When you need a quick dinner because you forgot to thaw out any meat, put the soup into a pot and cover.
